Just wondering how many people would be interested in a veggie/vegan restaurant downtown or midtown. I have been thinking about opening one and would like to know how much of an interest there would be. I make vegan food even my non-vegan friends drool over!!

We were just out for a bike ride and breakfast today and I was lamenting that we do not have a great restaurant like the Gravity bar in Sacramento. I am not sure if you know the Gravity bar, but it is a vegetarian restaurant and juice bar in Seattle. There juices were all made with organic produce and they could make just about anything. My favorite was orange, pineapple. Something like Jamba juice is just not the same. The GB also had tons of vegetarian dishes. One of my favoriets was the RV1 (several types of steamed veggies, tofu and brown rice). I always felt healthy and happy after leaving the Gravity bar. I would love to have a restaurant like that in Sac.

And I'm one omnivore who doesn't mind food WITHOUT meat, so you can bet I'd eat there! I used to be a sous chef in an organic/veggie restaurant, so hit me up if you need any info. -
